Muffin Mix allows you to bake great muffins at home. It is gluten, wheat, dairy, soy, potato, corn, preservative, sesame and peanut free, and you have the option to make egg free muffins by using an egg replacement.
INGREDIENTS: rice Flour, tapioca flour, sugar, vegetable gum, aluminium free baking powder.
Instructions: Mix 100 ml oil, 250 ml rice milk or alternative, and 5 ml vanilla; whisk together and add to one packet of mix (500g), mix gently. Let stand for 5 mins, then put into muffin tins and add flavours, let stand another 5 mins and bake for 25mins at 175.
Phoenix-Pikelet Mix - 500g

Pikelets: Take 250gr of mix and add one egg and 250mls of rice milk or milk and 5 mls of vanilla, let stand for 10 mins before cooking. Spoon into hot greased pan, flip, serve, top and enjoy.
Pancakes: add more liquid until a thinner consistency, cover bottom of hot greased pan thinly for a crepe or thicker for a hotcake, turn abnd serve. You can add blueberries before cooking and top with bacon, or squeeze lemon juice and sugar, anything that takes your fancy.
