Lemon grass is commonly used in Thai soups and curries. It can also be used in a marinade with minced garlic for meat, seafood and salad. Mince well to release flavour and breakdwon fibres.
When used in soups such as Tom Yum, wrap in muslin cloth so it can be removed before serving.
